Big salads with anything but lettuce can include things like fresh spinach, kale, sliced carrots, celery, broccoli, cauliflower, and maybe top it off with some black beans, peppers, olives, sunflower seeds, seasonal fruits like strawberries, apples, and peaches. A little bit goes a LONG way! You'll find that you don't need that much to create a beautiful big salad and when you eat that before you dive into that yummy pizza pie, you won't eat as many slices!
The next time your'e in the grocery store, look at the produce section like you're in the Ruby Tuesday salad bar line. Choose a variety of veg and fresh fruit and see what you can come up with besides lettuce!
The more variety you eat, the more nutrient dense your salads will be. This means that your body will get full on less because it's basic nutritional needs are being met!! (And that's the goal!) You'll be pleasantly surprised at how much more inches you can take off your waistline when you "add value" to this one thing on your plate!
